2 large eggs
1/2 cup sugar
1/4 cup fat free skim milk
2 Tbsp light butter, melted
1 Tbsp vanilla extract
1 cup white self-rising flour, sifted
1 1/2 Tbsp cornstarch
1 large green apple, peeled, cored and thinly sliced
1 tsp ground cinnamon
1 tsp sugar
Preheat the oven to 400ºF. Coat an 8-inch round cake pan with cooking spray, and line the bottom with parchment.
In a large bowl using an electric mixer, beat the eggs and 1/2 cup of the sugar until light and fluffy. Stir in the milk, the melted butter, and the vanilla extract.
Combine the flour and the cornstarch and fold it into the cake batter. Pour the mixture into the prepared pan.
Layer the apple slices in a circular pattern on top of the cake. Combine the cinnamon and the sugar in a cup and sprinkle it over apples. Bake until a tester comes out clean when inserted into the center of the cake, about 30 to 35 minutes. Cut the cake into 8 pieces and serve.
